EFFECTS OF FOOD WRAPS ON PROXIMATE ANALYSIS OF PROCESSED BEAN CAKE

ABSTRACT

The analysis for the effect of food wraps (Thaumatococcus danielli leaf and cellophane) was carried out using Standard Analytical Method. The result of the analysis reveals that the two wrapping materials affected the proximate composition of the sample (Moi – Moi). The result were as follows; Cellophane wrapped Moi – Moi; Moisture 64.59±0.23%, Ash 15.13±0.18%, Fat 6.18±0.09%, Fibre 13.58±0.71%, Protein 20.92±0.64%, Caloric Value 316.06±0.41% and Carbohydrates 44.19±0.25% and that of T. danielli leaves were moisture 68.38±0.17, Ash 16.40±0.50%, Fat 5.59±0.45%, Fibre 14.22±0.11%, Protein 21.81±0.06%, Caloric Value 305.47±0.39% and Carbohydrate 41.98±0.66%. The result shows that Traumatococcus danielli leaf wrapped had the highest level of the analyzed parameters. Hence, it is recommended that the wrapping leaf materials should be used for food packaging or wrapping of food products.
