ESTIMATING THE LEVEL OF ANTINUTRIENTS IN FONIO GRAINS BOUGHT FROM IKOT EKPENE MARKET

ABSTRACT

In this study, the antinutrient contents of fonio grains was investigated using standard laboratory procedures. The results revealed their presence in different concentrations. Tannin was the highest (24.843±0.095mg/100g), following by HCN (4.590 ± 0.001) and Oxalate (1.390 ± 0.035mg/100g) while phytate had the least concentration (0.837 ± 0.028mg/100g). The antinutrient content in fonio grains were however low hence may not cause nutritional deficiencies on regular consumption.
