ABSTRACT

African leafy vegetables (ALVs) have a great potential in reducing the gap in nutritional status between low- and high-income households because of their nutrient densities and affordability. Cowpea is one of the major ALVs produced and consumed widely at the Coast and Western regions of Nigeria as a dual-purpose crop (grain and leaf). Although local cowpea accessions are preferred by farmer sand consumers,therearestillmany challenges encountered.There is lack of sufficient information nutrient sandmicro-nutrientdensitiesandhighpostharvestlosses. High post-harvest losses havealsobeenreportedasaresultofperishability.The objective of this study was to evaluate and compare the nutritional and sensory attributes of five popular dual purpose local cowpea accessions and an improved variety developed by KALRO. In addition, the effect of blanching, solar drying and modified atmosphere packaging (MAP) on the shelf life and quality attributes of one superior cowpea accession was evaluated.
